Nigellas criss cross potatoes (slimming world friendly)

I had the privilege of meeting Nigella Lawson last Friday in Bath at an event including a signing of her new book. I have loved her cookery books and TV series for years and this was the 2nd time I have met her an she has always been so lovely and gracious and yes she is as beautiful in the flesh as she is on TV.

I have been looking through her book all weekend and found many recipes which with a little adjustment could be slimming world friendly but this one in particular I thought sounded delicious a cross between a roast potato and a baked potato? Yes please!!


This is hardly even a recipe but it works brilliantly. ..


Nigellas Criss Cross Potatoes


4 large baking potatoes (cut in half lengthways)
low calorie spray oil
sea salt

Put your oven on gas 7 /225/450 and place the potatoes in a roasting tin.

Make criss cross cuts in the top of each potato with a sharp knife not too deeply just about 1-2cm deep. 

Spray the potatoes with low calorie spray oil and sprinkle generously with salt.


Roast for approximately 45 minutes until brown and beautiful.
