Almond milk rice pudding (slimming world friendly)

I had this recipe from one of the girls in my slimming world group (Hi Liz!) and its realy good. Makes a baked style rice pudding really warming and creamy. The whole recipe is only 2 syns and makes loads so a quarter serving is ample and so only 1/2 syn per serving. Just the thing on this freezing Spring day!!

Almond milk rice pudding

200g pudding rice

850ml water

400ml Blue diamond almond breeze unsweetened milk

6-8 tbsps sweetener (or to taste)

freshly grated nutmeg or cinnamon



Place all the ingredients in a saucepan and bring to the boil and simmer for 15 minutes.
Put in an ovenproof dish and sprinkle the top with nutmeg.
Bake at 180/350/gas4 for 20 minutes or until top slightly browned .

  8. Yes you can have 1 litre as healthy extra a choice its in the book.

  13. Hiya - I love this recipe - I've even had this for breakfast. I can't stand the artificial taste of sweetener but I have found a sweetener - an expensive Stevia - that has no after taste so use that and this is divine!

  18. Instead of sweetener use Truvia. It's syn free and much nicer than sweetener. BUT it's very strong so you only need about 2TBSP
