No Bridget Jones turkey curry buffet jokes please! Seriously I love making turkey curry after Christmas and this recipe is surprisingly (at this time of year) slimming world friendly. It uses mainly store cupboard ingredients and leftovers feel free to throw in any leftover vegetables too.
2 large onions (sliced)
1lb of leftover cooked turkey (diced)
1 tin chopped tomatoes
some fresh tomatoes (if you have any left over)
1 pint chicken stock
2 tbsp medium hot curry powder (but make it as hot or mild as you like)
2 cloves garlic (crushed)
salt and pepper
Spray a large saute pan or saucepan with spray oil and gently fry the onions until soft but not coloured . Add the garlic and fry for another minute then add the curry powder and fry for another minute or two.
Add the tomatoes, stock and turkey and bring to a boil then reduce the heat and simmer until sauce has reduced and thickened. Season to taste with salt and pepper.
